I wanna add "unicorns", "ickyguanas" and "humans" to "species" but I don't see an option for that :(

First you would add a category to an appropriate character page. That creates a red link you can click, which prompts you on creating it, and then you place the new subcategory under the species category.
I actually ended up doing that in the 17th for unicorns, do you recall any besides trink/LOTL?

I was a bit confused by the 'warned by rollback' summary, which I thought might refer to the rollback ACTION as a warning (which is strange since you're not notified when users do that to edits) but upon review of your wall, it appears to be referencing https://pawpatrol.fandom.com/wiki/Thread:160242 where TheLazyCat (a user with Rollback rights) gave a warning.
It does seem like a strange issue for people to care about warring over, as brackets for links don't take up much code. Character lists (of appearances) do often include mentions of less important characters not included in summaries.
You're welcome to duplicate links between character lists and summaries HERE, but if Paw Patrol administration has expressed their preferences not to, I would suggest abiding by that to avoid future troubles.
